Background: Grew up on Long Island and spent my youth hanging out in diners. I’m an advanced home cook and have pretty good head for numbers. The kinda asshole who’s seen every episode of “mind of a chef” but has no actual restaurant industry experience other then working for a commercial laundry company in my 20’s.
I live in South Ridgewood Queens about 5 blocks east of the Wyckoff club strip and about 10 blocks east of the megaclub district . I can’t for the life of my figure out why there isn’t a diner in that neighborhood? Like right around Flushing/Myrtle avenue.
Something like a little 30 seat diner. 2 cooks, 1 dishie, 1 host/runner. Pair down/update the standard diner menu (add some modern vegan/vegetarian). Closed Mon/Tues, Open 24 hours Friday/Saturday (probably have a bouncer on weekends).
Obviously, margins are terrible and opening up a restaurant is a bad idea prima facie. But can somebody with actual restaurant experience show me the gaping hole in my little fantasy? Because it seems like a slam dunk? Artichoke pizza is a mob scene on weekends and food trucks are like locusts in that area.
